On set of The Mentor, Mark Bouris sat down with Andrew Connole to talk about the background of the Sonoma bakery.

Andrew travelled to San Francisco in 1998 to learn as much as he could about naturally-fermented sourdough, where it was pioneered in Northern California.

From there, the story moved to Bellata in regional NSW, where they would bake their bread each weekend and bring to Sydney to sell in the markets.

The brand launched in Sydney in 2001 and has been growing ever since.
